If you’ve ever tried pollo a la brasa, you know it’s one of the most flavorful ways to prepare roasted chicken. Like pollo horneado, it’s made with a whole chicken, but the flavor comes from Peruvian spices like ají panca and ají amarillo.

But if you don’t have them on hand, no problem. The base marinade is so flavorful on its own that your pollo a la brasa will still be super delicious. Plus, I’ll show you how to make it in the air fryer for that deliciously crispy crust and juicy texture, just like rotisserie-style chicken. It’s quick, easy, and packed with flavor!

Tie the chicken so it stays juicy

Tying the chicken helps it cook evenly and stay juicy, giving you results similar to rotisserie-style Peruvian chicken right at home in your air fryer.

By securing the legs and wings close to the body with kitchen twine, the chicken stays compact, locks in moisture, and develops that perfect golden, crispy crust while staying tender and flavorful inside.

Use the air fryer to get that rotisserie-style finish

An air fryer is the perfect tool to get that delicious rotisserie-style finish at home. The hot air circulation crisps up the skin beautifully while keeping the meat juicy and tender. By tying the chicken and flipping it halfway through cooking, you’ll get an even, golden-brown crust all around.

It’s an easy and convenient way to enjoy the flavor and texture of rotisserie chicken without any extra equipment.

Ingredients

  • 1 whole chicken
  • 5 cloves garlic mashed
  • 1 lime juice
  • 1 tbsp red wine vinegar
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp oregano
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp annatto
  • ¼ tsp black pepper
  • 1 tbsp aji panca (optional)
  • 1 tsp aji amarillo (optional)

Instructions

  • Mix all ingredients in a bowl to make the marinade, then pour it over the chicken, ensuring it’s fully coated inside and out. Marinate overnight in the refrigerator.
  • Tie the chicken by crossing the legs and securing them with kitchen twine, then tuck the wings underneath. This helps the chicken cook evenly and stay juicy. Preheat the air fryer to 350°F.
  • Place the chicken breast-side down in the air fryer and cook at 350°F for 40 minutes. Flip the chicken, pour some of the remaining marinade over it, and cook for another 40 minutes.
  • Check that the internal temperature reaches 165°F, then let the chicken rest for 5-10 minutes before serving. Buen provecho!
