Ingredients
  

  • 1 whole chicken
  • 5 cloves garlic mashed
  • 1 lime juice
  • 1 tbsp red wine vinegar
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp oregano
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp annatto
  • ¼ tsp black pepper
  • 1 tbsp aji panca (optional)
  • 1 tsp aji amarillo (optional)

Instructions
 

  • Mix all ingredients in a bowl to make the marinade, then pour it over the chicken, ensuring it’s fully coated inside and out. Marinate overnight in the refrigerator.
  • Tie the chicken by crossing the legs and securing them with kitchen twine, then tuck the wings underneath. This helps the chicken cook evenly and stay juicy. Preheat the air fryer to 350°F.
  • Place the chicken breast-side down in the air fryer and cook at 350°F for 40 minutes. Flip the chicken, pour some of the remaining marinade over it, and cook for another 40 minutes.
  • Check that the internal temperature reaches 165°F, then let the chicken rest for 5-10 minutes before serving. Buen provecho!
