It comes out super tender with that cozy guiso sauce that’s perfect for serving on top of arroz con guandules, habichuelas negras, or plain arroz blanco. It’s the kind of dish the whole family immediately calls dibs on before you even finish serving it.

Ingredients
  

  • 6-8 pieces bone-in turkey thighs, drumsticks, or wings
  • ¼ cup sofrito
  • 1 tsp adobo
  • ½ tsp sazon
  • ¼ tsp oregano
  • ¼ tsp salt
  • 1 tbsp oil
  • ½ tsp sugar
  • 2 tbsp tomato sauce
  • 3 cloves garlic crushed
  • ½ red onion sliced
  • 1 cubanelle pepper sliced
  • 5 sprigs recao
  • 5 sprigs cilantro
  • 3-3½ cups chicken stock
  • ½ lime juiced
  • ½ orange juiced
  • To taste salt

Instructions
 

  • In a bowl, add the turkey, sofrito, adobo, sazon, oregano, and salt.
  • Heat oil in a pot over medium heat. Add sugar to the hot oil and let it caramelize.
  • In batches, add the turkey to the pot and cook for 4-5 minutes, or until fully seared. Turn the turkey pieces and continue cooking for another 4-5 minutes, or until fully seared.
  • Add 2 cups of chicken stock to the pot and let the turkey cook on low for 1 hour with the pot partly covered.
  • Add 1 cup of chicken stock and the tomato sauce, garlic, onion, cubanelle pepper, recao, cilantro, lime juice, and orange juice to the pot and combine.
  • Cook for an additional 30 minutes uncovered, or until the sauce reduces in half and thickens. Add ½ cup chicken stock if the sauce begins to dry out. Taste for salt and serve. Buen provecho!
