Locrio is a classic Dominican dish made with rice and meat, and this locrio de salchicha is one of the easier and budget-friendly locrios that uses just two cans of Vienna sausage as the main protein. Whether it’s locrio de salami, locrio de pollo, or locrio de longaniza, locrios always come through for me when I need a quick and satisfying dinner.

Use veinna sausages or hotdogs

For this locrio de salchicha, you can use either Vienna sausages or hotdogs, whichever you have on hand. Vienna sausages are softer and a little milder, while hotdogs give the dish a firmer bite and a slightly smoky flavor. Both work great, so it really comes down to your preference.

Use extra long grain rice

Extra long grain rice is what I love to use for my Dominican rice recipes. I typically use the brand my abuela uses: Canilla. But I also like Carolina.

I’ve tested this recipe with a few kinds of rice, and it works with jasmine rice or any kind of extra long grain rice. The only rice I’d steer you away from for Dominican locrios and moros is basmati because the grains are too long and the dish doesn’t come out the same.

Ingredients
  

  • 1 tsp olive oil
  • 2 cans vienna sausage
  • ¼ red onion chopped
  • ¼ green bell pepper chopped
  • 3 cloves garlic crushed
  • 1 tbsp sofrito
  • 1 tbsp tomato paste or ¼ cup tomato sauce
  • 1 tbsp soy sauce
  • ½ lime juice
  • 1 tsp adobo
  • ¼ tsp oregano
  • ½ tsp salt
  • cups rice
  • 2 cups + 2 tbsp water
  • 1 handful cilantro

Instructions
 

  • In a medium pot over medium heat, add olive oil and sliced Vienna sausages. Cook until lightly browned.
  • Add the onion, bell pepper, garlic, sofrito, tomato paste or tomato sauce, soy sauce, lime juice, adobo, oregano, and salt. Mix well and cook until the vegetables soften, about 2 minutes.
  • Stir in the water and bring to a boil. Add the rice and cook, stirring frequently to prevent sticking, until most of the water is absorbed.
  • Once the water is mostly absorbed, gently mound the rice into a dome shape in the center of the pot. Add the cilantro to the pot and cover with a lid, reduce the heat to low, and let it cook for 20 minutes.
  • Remove from heat, fluff the rice with a fork, and sprinkle in the cilantro. Cover again and let it sit for 5 minutes before serving. Buen provecho!
