Locrio de Salchicha (Dominican Rice and Vienna Sausage)

Ingredients
  

  • 1 tsp olive oil
  • 2 cans vienna sausage
  • ¼ red onion chopped
  • ¼ green bell pepper chopped
  • 3 cloves garlic crushed
  • 1 tbsp sofrito
  • 1 tbsp tomato paste or ¼ cup tomato sauce
  • 1 tbsp soy sauce
  • ½ lime juice
  • 1 tsp adobo
  • ¼ tsp oregano
  • ½ tsp salt
  • cups rice
  • 2 cups + 2 tbsp water
  • 1 handful cilantro

Instructions
 

  • In a medium pot over medium heat, add olive oil and sliced Vienna sausages. Cook until lightly browned.
  • Add the onion, bell pepper, garlic, sofrito, tomato paste or tomato sauce, soy sauce, lime juice, adobo, oregano, and salt. Mix well and cook until the vegetables soften, about 2 minutes.
  • Stir in the water and bring to a boil. Add the rice and cook, stirring frequently to prevent sticking, until most of the water is absorbed.
  • Once the water is mostly absorbed, gently mound the rice into a dome shape in the center of the pot. Add the cilantro to the pot and cover with a lid, reduce the heat to low, and let it cook for 20 minutes.
  • Remove from heat, fluff the rice with a fork, and sprinkle in the cilantro. Cover again and let it sit for 5 minutes before serving. Buen provecho!
