Albondigas guisadas are one of my favorite ways to turn ground beef into a quick and delicious Dominican dinner. These meatballs come together in under an hour with simple ingredients like onion, bell peppers, tomato sauce, eggs, and breadcrumbs.
And of course, the classic seasonings like adobo and sazón that give these albondigas guisadas their Dominican flavor. I love serving these with some Dominican white rice, habichuelas, and fried plantain, and avocado for the perfect meal.

Brown the meatballs for more flavor
For the best flavor in these Dominican style meatballs, make sure to sear them well on all sides because that caramelization is key to adding depth to the dish.
Another tip is to use 80/20 ground beef since the fat adds extra flavor too! 90/20 ground beef will work too, but it’s a little bit too lean and won’t be as flavorful. And if you have extra ground beef, you can use it to make dishes like plantain boats or a chimi burger.
Thicken the sauce slowly
The key to perfectly tender albondigas and a rich, flavorful sauce is to let them simmer slowly with the lid slightly covered. This helps the flavors develop while keeping the meatballs juicy and the sauce thick.

- In a bowl, combine the ground beef, red onion, red bell pepper, sofrito, adobo, salt, black pepper, egg, and breadcrumbs. Mix until everything is well incorporated, then roll into 12 evenly sized meatballs and set aside.
- Heat olive oil in a pan over medium heat and sear the meatballs until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the red onion, red bell pepper, green bell pepper, and sofrito. Sauté until the vegetables soften.
- Pour in the tomato sauce, water, sazón, and salt, stirring to combine. Let the sauce simmer for about 5 minutes.
- Return the meatballs to the pan, partially cover with a lid, and let simmer for 20 minutes, stirring occasionally, until the sauce thickens and the meatballs are fully cooked.
- Serve warm and enjoy. Buen provecho!
