This is the sauce people often call ‘Dominican fried chicken sauce’ because it’s basically always served with chicken like pica pollo. And that’s because it’s super delicious!

Difference between wasakaka and chimichurri
Wasakaka, also known as guasacaca, is a light and zesty sauce made with parsley, cilantro, lime, garlic, and red onion. It’s more citrusy than chimichurri, which is richer and herbier. Wasakaka is great with roasted chicken, fried foods, or tostones, and you usually see chimichurri on churrasco steaks.
Blend it or keep it chunky
Wasakaka sauce is usually served chunky, but bits of garlic, parsley, and cilantro in every bite. But giving it a quick blend creates a creamy, refreshing texture that’s just as delicious!
Wasakaka (Dominican Garlic Herb Sauce)

Ingredients
- 4 limes juiced
- ¼ red onion sliced
- 4 garlic cloves
- ¼ tsp oregano
- 6 sprigs parsley chopped
- 6 sprigs cilantro chopped
Instructions
- Combine the lime juice, red onion, garlic cloves, oregano, parsley, and cilantro in a bottle or jar.
- Seal tightly and store in the fridge to chill. Serve with pollo al horno y buen provecho!
