This mojo grilled chicken is one of those recipes that’s simple but with big flavors. Thin sliced chicken breast gets marinated in a quick citrus garlic sauce made with just a few basic ingredients. This recipe is one of my trusty weeknight dinners because it’s ready in under 20 minutes and I can use it to build mojo chicken bowls with white rice, black beans, sauteed onions, and avocado. Literally the perfect bite!

Mojo sauce ingredients
Making mojo from scratch is super easy. And the flavors here are so fresh, store brought mojo doesn’t even come close. You’ll just need:
- Lime juice
- Orange juice
- Garlic
- Oregano
- Salt
- Black pepper
These are the ingredients to a basic mojo, but to make the marinade a little more flavorful I love adding sofrito and adobo seasoning.
Turn the marinade into a sauce
I always use the rest of the marinade to make a little mojo reduction sauce and drizzle it all over the mojo grilled chicken. I just pour the marinade into a pan and add a little bit of brown sugar and chili flakes to thicken it up and give it some heat. The sauce cooks for 3-4 minutes until it reduces in half and thickens.
How to make mojo chicken bowls
One of my favorite ways to serve this mojo grilled chicken is in a rice bowl. I use white rice as my base, then I add some black beans, sauteed onions, lots and lots of avocado, and my sliced mojo chicken. I take my mojo reduction and drizzle it over the whole bowl, and dinners ready!
Mojo Grilled Chicken

Ingredients
Mojo Reduction
- Reserved marinade
- ½ tsp brown sugar
- ¼ tsp red chili flakes
Instructions
- Squeeze the juice an orange and lime into a bowl. Mash or grate the garlic using a mortar and pestle or a grater, and add it to the bowl with the sofrito, oregano, salt, adobo, and black pepper.
- Slice the chicken breasts in half so they’re about ½ inch thick. This helps them cook quicker and stay juicy. Mix it all together and pour it over your chicken breasts, make sure they're fully coated, then let it marinate in the fridge for at least 5 minutes.
- Heat up a grill pan or regular grill over medium-high heat and grill the chicken for a few minutes on each side until it’s fully cooked and nicely charred. Set it aside to rest.
- Take the leftover marinade and pour it into a small saucepan with brown sugar and red chili flakes. Bring it to a boil, then lower the heat, and let it simmer for a few minutes until it reduces in half and thickens.
- Slice the chicken, pour the mojo reduction on top, and serve it in a mojo chicken bowl. ¡Buen provecho!
