Ensalada rusa con aguacate is a healthier version of traditional Dominican potato salad. It’s pretty much the same recipe, but in this version I like to swap the mayonnaise with mashed ripe avocados.

I call this green potato salad because the avocado adds a green color, kinda how beets turn potato salad pink in pink potato salad.

Leave some avocados pieces for texture

As you add the avocado, mash most of it to make the salad creamy, but leave some chunks for texture. Those pieces give a nice bite and the salad stays smooth but still has a little extra something to keep it interesting!

The avocado replaces the mayo in this recipe

In this ensalada rusa con aguacate, avocado stands in for mayo, adding that same creamy texture but with a fresh, light twist. It brings richness to the salad and keeps things feeling a bit fresher.

I know plenty of people who aren’t fans of mayo and often skip sides like ensalada rusa at Thanksgiving, so this version is for them.

Serve warm or cold

Ensalada rusa is usually served cold, and I included 1 hour chill time in my recipe but this version doesn’t need to be served chilled. Just let it come to room temperature before serving.

Ingredients
  

  • 3 potatoes
  • 2 small carrots or 1 large carrot
  • 3 tbsp white vinegar
  • 2 eggs
  • 1/2 red onion chopped
  • 2 avocados
  • 1 lime
  • Salt and pepper to taste
  • 10 stems cilantro chopped
  • Avocado slices for garnish
  • Cilantro for garnish

Instructions
 

  • Boil potatoes and carrots in a pot with 1 tbsp of vinegar until tender. Boil eggs separately until fully cooked.
  • Once cooked, cool the potatoes, carrots, and eggs. Peel and dice them.
  • Cook onion with 2 tbsp of vinegar over low heat until translucent.
  • Peel the avocados, slice into pieces and mash most of them, keeping some pieces intact for texture.
  • In a large bowl, combine potatoes, carrots, eggs, onion, and mashed avocado. Add lime juice, salt and pepper to taste, and chopped cilantro, then mix well.
  • Garnish with cilantro leaves and sliced avocado. Refrigerate for at least an hour before serving. Enjoy!
