Avocado Potato Salad (Ensalada Rusa con Aguacate)

Ensalada rusa con aguacate is a lighter take on potato salad that’s still creamy and flavorful, made with mashed avocado instead of mayo.

Ingredients
  

  • 3 potatoes
  • 2 small carrots or 1 large carrot
  • 3 tbsp white vinegar
  • 2 eggs
  • 1/2 red onion chopped
  • 2 avocados
  • 1 lime
  • Salt and pepper to taste
  • 10 stems cilantro chopped
  • Avocado slices for garnish
  • Cilantro for garnish

Instructions
 

  • Boil potatoes and carrots in a pot with 1 tbsp of vinegar until tender. Boil eggs separately until fully cooked.
  • Once cooked, cool the potatoes, carrots, and eggs. Peel and dice them.
  • Cook onion with 2 tbsp of vinegar over low heat until translucent.
  • Peel the avocados, slice into pieces and mash most of them, keeping some pieces intact for texture.
  • In a large bowl, combine potatoes, carrots, eggs, onion, and mashed avocado. Add lime juice, salt and pepper to taste, and chopped cilantro, then mix well.
  • Garnish with cilantro leaves and sliced avocado. Refrigerate for at least an hour before serving. Enjoy!
