Chofan is the Dominican version of Chinese fried rice made with scallions, bell peppers, onions, and cabbage. This is one of my favorite quick dinner recipes, and I actually prefer it over regular fried rice because it has a fresher taste thanks to the lime juice.
The lime juice adds a bright touch that pairs perfectly with the savory flavors, making this chofan feel lighter and more refreshing.

Divide the scallion whites and green
Separate the scallion whites and greens to use them at the right time. The whites add bold flavor when cooked with the veggies, while the greens bring a fresh touch at the end.
Drizzle the chofan with chimi sauce
Just like Chinese fried rice is topped off with yum yum sauce, Dominican chofan is topped off with a chimi sauce. Chimi sauce is made with mayo, ketchup, mustard, sour orange juice (or lime juice), and soy sauce.
Pair the dish with fresh tostones
Tostones are the perfect side for this chofan. The crispy, salty fried plantain go so well with this Dominican fried rice. I like to serve them fresh and hot and with an extra drizzle of chimi sauce.
Chofan (Dominican Fried Rice)

Ingredients
- 1 chicken breast fillet cut into pieces
- 1 tsp sofrito
- ¼ tsp oregano
- Salt and pepper
- 3 tbsp soy sauce
- ½ lime
- ¼ tsp adobo
- 1 pinch cumin
- 1 tsp olive oil
- 1 egg
- ¼ red onion chopped
- ¼ red bell pepper chopped
- 2 scallions chopped and divided
- 1 cup cabbage shredded
- 1 cloves garlic chopped
- 2 cups white rice
- ½ cup chimi sauce
Instructions
- Season chicken with sofrito, oregano, salt, and pepper, then set aside. Mix soy sauce, lime juice, adobo, and cumin in a small bowl and set aside.
- Heat olive oil in a pan over medium heat, scramble the egg, cook until set, then remove and set aside.
- In the same pan, cook the seasoned chicken until browned and fully cooked. Remove and set aside.
- Add red onion, red bell pepper, cabbage, garlic, and the white parts of scallions to the pan. Sauté until softened.
- Add cooked rice, chicken, and egg to the pan. Pour in the soy sauce mixture and stir fry until evenly combined.
- Stir in the green parts of the scallions, mix well, and serve with chimi sauce. Buen provecho!
