Chofan (Dominican Fried Rice)

Ingredients
  

  • 1 chicken breast fillet cut into pieces
  • 1 tsp sofrito
  • ¼ tsp oregano
  • Salt and pepper
  • 3 tbsp soy sauce
  • ½ lime
  • ¼ tsp adobo
  • 1 pinch cumin
  • 1 tsp olive oil
  • 1 egg
  • ¼ red onion chopped
  • ¼ red bell pepper chopped
  • 2 scallions chopped and divided
  • 1 cup cabbage shredded
  • 1 cloves garlic chopped
  • 2 cups white rice
  • ½ cup chimi sauce

Instructions
 

  • Season chicken with sofrito, oregano, salt, and pepper, then set aside. Mix soy sauce, lime juice, adobo, and cumin in a small bowl and set aside.
  • Heat olive oil in a pan over medium heat, scramble the egg, cook until set, then remove and set aside.
  • In the same pan, cook the seasoned chicken until browned and fully cooked. Remove and set aside.
  • Add red onion, red bell pepper, cabbage, garlic, and the white parts of scallions to the pan. Sauté until softened.
  • Add cooked rice, chicken, and egg to the pan. Pour in the soy sauce mixture and stir fry until evenly combined.
  • Stir in the green parts of the scallions, mix well, and serve with chimi sauce. Buen provecho!
