If it’s holiday season, then the Dominican pink potato salad is coming out! I can’t get enough of ensalada rusa, between the regular one, the pink one, and my newest avocado potato salad, I could eat this everyday.
This one is especially special to me because it’s known for being a Thanksgiving and Christmas staple. You already know to make room for it during nochebuena!

Beets make it pink
There’s no food color or out of the ordinary ingredient in this ensalada rusa. It’s just a natural ingredient: beets.
You just add a few sliced beets and little bit of their juice to the salad to give it that pink hue we all love.
Cut the potatoes and carrots before boiling
One of my secrets with Dominican pink potato salad is to chop up the potatoes and carrots before boiling them.
I used to boil them whole and then peel and cut them later, but I found that cutting them before hand actually creates a softer and creamier ensalada rusa rosada.
Plus, it’s ready so much quicker!

Ensalada rusa rosada is just one of the many sides you’ll find on a Dominican Thanksgiving or Christmas spread.
Some others are ensalada de coditos, ensalada verde, and platano maduros.
These are usually served with a couple different options for mains like pollo horneado, moro de gandules, and pavo al horno.
Dominican Pink Potato Salad (Ensalada Rusa Rosada)

Ingredients
- 4 potatoes
- 2 carrots
- 2 eggs
- ½ red onion chopped
- 2 tbsp vinegar
- 1 cup mayonnaise
- 1 cup beets chopped
- 3 tbsp beet juice
- Salt and pepper to taste
- 10 stems cilantro chopped
Instructions
- Peel and cut the potatoes and carrots, then boil them in a pot until tender. Boil eggs separately until fully cooked.
- Once cooked, cool the potatoes and carrots. Peel and dice the eggs.
- Cook the onion with vinegar over low heat until translucent.
- In a large bowl, combine potatoes, carrots, eggs, onion, and beets. Add beet juice, salt, pepper, and chopped cilantro, then mix well.
- Refrigerate for at least an hour before serving. Enjoy!
