In a bowl, add the chicken, garlic, sofrito, adobo, sazon, and oregano.
Heat oil in a pot over medium heat. Add sugar to the hot oil and let it caramelize.
Add the chicken to the pot and cook for 4-5 minutes, or until fully seared. Turn the chicken pieces and continue cooking for another 4-5 minutes, or until fully seared.
Add 1 cup of water to the pot and cook the chicken for 10 minutes, or until tender, with the lid slightly open.
Add onion, bell pepper, garlic, sofrito, soy sauce, tomato paste, lime, adobo, salt, and oregano to the same pot. Mix and cook until the vegetables soften, about 1-2 minutes.
Add water to the pot and bring to a boil. Add rice and cook until most of the water is absorbed, stirring frequently to prevent from sticking.
When most of the water is absorbed, create a dome shape with the rice by gently mounding it up in the center of the pot. Cover with a lid, reduce heat to low, and cook for 20 minutes.
Remove from heat, fluff with a fork, cover, and let sit for 5 minutes before serving. Buen provecho!
