Dominican stewed beans is one of the most loved recipes from the Dominican Republic. This traditional habichuelas guisadas recipe comes together in just 5 steps using canned or dry beans.
Rinse and clean the dry beans, then soak in 4 cups of water overnight (at least 8 hours).
The next day, drain the beans and add them to a pot with 4 cups of water. Bring to a boil, then simmer with the lid slightly open for 1 hour, until tender. Drain and reserve the cooking water for later.
How to make Dominican beans
In a pot over medium heat, add oil and sofrito and cook for 30 seconds.
Add onion, celery, garlic, tomato paste, sazón, salt, adobo, and oregano. Cook for 1-2 minutes until the vegetables start to soften.
Add the beans and water (or the reserved cooking water) to the pot and stir to combine. Bring it to a boil, then cover and simmer on low for 40 minutes.
After 20 minutes, about halfway through cooking, add the cilantro and kabocha squash to the pot. Put the lid back on and let it finish cooking for another 20 minutes.
After 40 minutes, remove the onion, celery, garlic, and cilantro. To thicken the beans mash ¼ cup of them and stir back into the pot. Remove from heat and let the beans sit for 5 minutes to thicken. Serve warm.

Store the habichuelas in the fridge for 3-4 days or freeze for up to 2-3 months. Defrost in the fridge or microwave, then reheat on the stovetop or in the microwave, adding water if needed, and season to taste.
