In a pot over medium heat, combine oil and salt. Let it got hot, which should only take about 2-3 minutes, then carefully add the water to the pot.
Let the water come to a boil before adding the rice. Stir the rice and cook until almost all of the water is absorbed, stirring frequently to prevent from sticking.
After most of the water is absorbed, use a spoon to form a mound in the center of the pot with the rice, making sure no rice is touching the sides. Reduce heat to low, cover, and simmer for 20 minutes.
Remove from heat and fluff with a fork. Let it sit covered for 5 minutes and enjoy with a side of habichuelas guisadas.Buen provecho!
