Chicharrónes de Pollo (Fried Chicken Bites)

Ingredients
  

  • 4 chicken thighs cut into chunks
  • 3 cloves garlic smashed
  • 1 tbsp sofrito
  • 1 tsp adobo
  • 1 tsp sazon
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp garlic powder
  • 1 cup flour
  • Frying oil
  • 3 Limes

Instructions
 

  • In a bowl, combine chicken, garlic, sofrito, adobo, sazon, oregano, salt, and the juice of 1 lime. Let the chicken marinate for at least 30 minutes, or overnight if you can.
  • In a bowl, combine flour, garlic powder, and salt to taste. Coat the chicken thoroughly in the flour, making sure every part of the chicken is coated well. The better you coat the chicken, the crunchier it will be after frying.
  • In a pan over medium heat, add enough frying oil to cover 1 inch from the bottom of the pot.
  • Let the oil get very hot before adding the chicken and cooking until crispy and golden brown, or about 8-10 minutes.
  • Remove the chicken from the oil and place onto a paper towel lined plate to drain. Cut the remaining limes into wedges and squeeze lime juice over the chicken while it's still hot. Serve with lime wedges and enjoy!
