Ingredients

  • 1 yuca root or cassava
  • Frying oil
  • Salt

Instructions

  • Trim both ends of the yuca, then make one cut along the middle to divide it into two pieces. Make a cut along the length of both yuca pieces and peel the skin off along the cut.
  • Cut each piece in half, creating 4 pieces in total, then use a knife to remove the fibrous core from the center of each piece.
  • Slice each piece into 4 sticks, trying to make them all about the same size so they cook evenly.
  • Add the yuca sticks to a pot of salted water, boil them for about 30 minutes until they're tender, then remove and pat them dry with paper towels.
  • Heat oil in a pan over medium heat and add the yuca sticks in batches once the oil is hot. Fry them until golden brown and crispy, about 5-6 minutes, flipping halfway.
  • Remove the fried yuca sticks from the oil and place them on a paper towel-lined plate to drain. Season hot yuca fries with salt to taste. Buen provecho!

Notes

Oven method:
  1. Follow the instructions for prepping the yuca fries, then instead of frying them, preheat the oven to 425°F.
  2. Toss the yuca fries with olive oil, salt, and any seasoning you'd like. I like a mix of paprika, garlic powder, onion powder, and black pepper.
  3. Arrange the fries in a single layer on a baking sheet.
  4. Bake for 25-30 minutes, or until golden and crispy, flipping halfway through.

Airfryer method:
  1. Follow the instructions for prepping the yuca fries, then instead of frying them, preheat the airfryer to 400°F.
  2. Toss the yuca fries with olive oil, salt, and any seasoning you'd like. I like a mix of paprika, garlic powder, onion powder, and black pepper.
  3. Place the fries in the airfryer basket in a single layer.
  4. Cook for 15-20 minutes, or until golden and crispy, shaking the basket halfway through.
