Ingredients
  

  • 1 large yuca peeled and cut
  • ¼ cup olive oil
  • ½ red onion sliced
  • ¼ red bell pepper diced
  • 2 cloves garlic mashed
  • 1 lime
  • ¼ tsp oregano
  • 1 pinch cumin
  • Salt and pepper to taste

Instructions
 

  • In a pot over medium heat, add yuca to pot with water and salt. Cook until soft and tender, about 45 minutes, then drain the yuca and set aside.
  • In a pan, add oil, onions, peppers, garlic, lime, oregano, cumin, salt, and pepper. Cook until the onions are translucent and the spices are fragrant, about 3 minutes.
  • Serve the yuca with the mojo sauce on top. ¡Buen provecho!
