If using fresh yuca, peel off the skin, cut it into chunks, and remove the tough, fibrous core from each piece before cooking.
Place the yuca in a pot and cover completely with chicken broth and add salt. Bring to a boil and cook for about 40 minutes, or until very soft and easily pierced with a fork. Drain and set aside.
Remove and discard any tough core pieces from the cooked yuca, then transfer to a large bowl.
Add the butter, heavy cream, shredded mozzarella, and chopped cilantro. Mash until smooth and well combined. For an extra creamy texture, use a hand mixer to blend it until light and smooth.
Spoon the yuca mash onto a plate and finish with a sprinkle of chopped cilantro. ¡Buen provecho!
