In a medium pot over medium heat, add oil and salami cubes. Cook until crispy and browned.
Add onion, bell pepper, garlic, sofrito, soy sauce, tomato paste, lime, adobo, salt, and oregano to the same pot. Mix and cook until the vegetables soften, about 2 minutes.
Add corn and water to the pot and bring to a boil. Add rice and cook until most of the water is absorbed, stirring frequently to prevent from sticking.
When most of the water is absorbed, create a dome shape with the rice by gently mounding it up in the center of the pot. Cover with a lid, reduce heat to low, and cook for 20 minutes.
Remove from heat, fluff with a fork, cover, and let sit for 5 minutes before serving. Buen provecho!
Notes
Cut the salami into cubes or triangles about 1/2 in size.Be careful not to overcook the rice, once most of the water is absorbed then cover the pot and let it finish cooking in its steam on low heat.
