Ingredients
  

  • 1 lb jumbo shrimp
  • ¼ red onion thinly sliced
  • ¼ green bell pepper diced
  • 1 tomato diced
  • 1 lemon
  • 2 limes
  • 1 bunch cilantro finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Fill a pot with water and bring to a boil. Add the shrimp to the boiling water and cook for 2-3 minutes until pink. Remove from the pot and set aside to drain.
  • In a bowl, combine shrimp, onion, bell pepper, tomato, and cilantro in a bowl. Add lemon juice, lime juice, salt, and black pepper and mix well.
  • Let the ceviche chill in the fridge for 1 hour or overnight if you can. Serve with tostones or plantain chips and enjoy! Buen provecho!
