Arepitas de Yuca (Cassava Fritters)

Ingredients
  

  • 1 yuca (cassava root)
  • 1 egg
  • 1 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp anise seeds
  • 1 tsp salt
  • Frying oil

Instructions
 

  • Peel the yuca and grate it using the finest side of the grater until it turns into a paste. In a large bowl, mix the grated yuca with the egg, butter, salt, sugar, and anise seeds until everything is well combined.
  • Heat a frying pan over medium heat and add enough oil to cover the bottom of the pan. Scoop tablespoon of the mixture into the hot oil, pressing them down slightly to shape them into small fritters.
  • Cook the fritters for about 2-3 minutes on each side, until they’re golden brown and crispy. Remove them from the pan and drain on paper towels. Serve warm and buen provecho!
